Apple & Cider Cake

It’s British Food Fortnight and here at Hunt’s Cider we are celebrating all recipes appley! Thank you to Sima from The Kitchen Table, for this scrummy Apple & Cider Cake recipe.

Apple and Cider Cake with honey, white chocolate and curd cheese topping

Ingredients

For the cake..

175g sultanas

150ml Hunts Wobbler Cider

1tbsp brandy

225g sugar

180g butter

280g flour

1.5tsp baking powder

1tsp cinnamon

2 large eggs

1 lemon zested

2 large cooking apples

1tbsp honey

For the icing…

75g icing sugar

75g soft butter

5tbsp honey

175g white chocolate, melted

150g curd cheese

 

Soak the sultanas in Hunts cider and brandy overnight. Grease and line a 20cm cake tin. Peel, core and cube the apples and add them, the honey and the lemon zest to the sultanas. Beat the butter & sugar until pale. Sieve the dry ingredients together. Add one egg to the butter sugar mix and beat. Add a tablespoon of the flour mix, then another egg and another tablespoon flour. Fold in the remaining flour to the egg mix followed by the apple sultana mix. Spoon into the tin and bake at 170 degrees for 45-55 minutes. Allow to cool in the tin for 10 minutes then transfer to a cooling rack.

Beat together all the ingredients for the icing top and smooth over the cooled cake. Serve with hot tea or coffee 🙂
